Slow Cooker Loaded Potato Soup

Some evenings, the last thing you want to think about is what's for dinner. Between homework, after-school activities, bedtime routines and everything else on your plate, getting a homemade meal on the table can feel like one more thing to manage.

That's where the slow cooker comes in! This cozy loaded potato soup uses simple, familiar ingredients and requires very little hands-on preparation. Just toss everything in, let it cook and come back to a warm, comforting meal the whole family can enjoy.

Because nourishing your family shouldn't mean spending your entire evening in the kitchen.

Ingredients

  • 5 yellow potatoes, peeled and cubed

  • 1 medium yellow onion, sliced

  • 3 small garlic cloves, sliced

  • ½ tsp sea salt

  • 4 cups low-sodium chicken broth

  • 1½ cups water

  • 2 oz cheddar cheese, shredded

Nutritional Insights

energy & Blood Sugar Balance

Potatoes provide carbohydrates that your body breaks down into glucose for energy. They also contain fiber, particularly when the skins are left on. Pairing this soup with a protein-rich food can help create a more balanced, satisfying meal and support steadier blood sugar levels.

Potassium & Muscle Function

Potatoes are naturally rich in potassium, an essential mineral that supports healthy muscle contractions, nerve signaling and fluid balance. Potassium also plays an important role in maintaining healthy blood pressure.

Immune Support

Potatoes provide vitamin C, which supports normal immune function and helps protect cells from oxidative stress. Garlic and onions also contribute beneficial plant compounds, adding both flavor and nutritional variety to this comforting meal.

POTATO SOUP Recipe

Servings: 5
Serving Size: ~ 1½ cups

Instructions

  1. Add the cubed potatoes, sliced onion, garlic, sea salt, chicken broth and water to a slow cooker.

  2. Cover and cook on high for 4 hours or low for 8 hours, until the potatoes are tender.

  3. Just before serving, cook the bacon in a skillet over medium heat until crispy. Chop into small pieces.

  4. Once the soup is finished cooking, stir in half of the bacon and reserve the remaining bacon for garnish.

  5. Ladle the soup into bowls and top with shredded cheddar cheese, remaining bacon and fresh parsley. Serve warm and enjoy!

Wellness Notes

  • Leftovers: Refrigerate in an airtight container for up to four days. Reheat thoroughly before serving.

  • Vegetarian Option: Omit the bacon and substitute vegetable broth for the chicken broth. For a vegan version, also omit the cheese or use a plant-based alternative.

  • More Flavor: Stir in a splash of heavy cream for a richer, creamier soup.

  • Creamier Texture: Mash some of the cooked potatoes directly in the slow cooker before serving. This naturally thickens the soup without needing additional ingredients.

  • More Protein: Add shredded chicken or serve alongside a protein-rich main dish to make this a more balanced meal.

  • Meal Prep Tip: Chop the potatoes, onion and garlic ahead of time so everything is ready to go in the slow cooker the next morning. Refrigerate the prepared ingredients safely until you're ready to cook.

  • A Little Reminder: Not every homemade meal needs to be elaborate or made completely from scratch. Sometimes caring for your family looks like letting the slow cooker do the work while you focus on everything else that matters. Simple meals count, too!
